Christmas Marshmallow Cupcakes

Hey everyone :)

So I wanted to do some Christmas'y baking and after scouring Pinterest and googling 'Christmas cakes' I found a great recipe I haven't made in ages.

Now this recipe is so simple and is for all ages - you can all remember those Rice Krispie Marshmallow bars don't you? I made them in school, when it was a rainy day outside, when I went to my grandparents!

It's a great recipe and there are so many alterations and things you can do to it to make it different every time you make them! So enough yammering ...

You will need:

55g butter or marg
300g marshmallows
175g Rice Krispies (or cheap rice snaps or something)

Optional
Christmas holly and berry candy sprinkles
Christmas red/green hundreds and thousands
Green food colouring
Christmas cupcake cases

As I said at the start the basic recipe is butter, marshmallows and Rice Krispies - the additional ingredients can be whatever you want - I am using green food colouring to give it a green Christmasy look and then decorating with sprinkles.

Please remember if you are a child - get your parents to help - I don't want you burning yourself or having an accident.

1. Melt the butter in a pot over a low heat. Don't let it burn or get too hot.

2. Add the marshmallows and still melt over a low heat until they are all melted (be careful it doesn't stick to bottom of pot)

3. Take off the heat. Add the green food colouring (I nearly forgot this and had started to shake some of the Rice Krispies into the pot) If your pot is big enough add the Rice Krispies to the pot or pour the melted mixture into a bigger bowl with the Rice Krispies - stir for 2/3 minutes until all incorporated.

4. Quickly but carefully spoon the mixture into already prepared cake tins and cases. The reason I say quickly is - the cooler the mixture gets the more it sets and gets harder to handle.

5. Decorate with sprinkles, chill for 30 mins or so.
6. Put into air tight container or something so they don't go soft.
7. EAT them.

4. I wanted to add that you don't have to make cupcakes - they can be bars - if you have a deepish baking tray - you can tip the mixture into that - flatten, chill and then cut into squares.
