Healthy Eating - Part 1

Most of you who read my blog probably start work at a reasonable time (ie 9am) not 5am like me. So getting up, and getting ready and eating breakfast is a big issue for me. Sometimes I think my body suffers because of it (wow ... dramatic) but on a serious note ... My alarm goes off at 4am, by the time I've properly woken up and gotten out of bed it's 4.40am, enough time to get some clothes on, run a face wipe over my face, do my hair, clean my teeth and then make it to work on time for 5am.

So I miss the important things like breakfast which as we're always being told is a very important part of your day!

I've put some measures into place to help me get breakfast in the morning and I try to make it healthy. This involves me preparing breakfast/lunch for the following day the night before - just before I go to bed. I've also started keeping food at work. In my previous blog (July Favourites) I mentioned that I got some plastic containers - so I have been using them. I got 3 sizes (small, medium, large) ... which is good for different sizes of food.

The first item I have been eating (and you can probably guess by the picture) is:

Grapefruit
I never used to be a fan of Grapefruits, I remember when I worked at my hotel job - every morning we had to cut about 10 or so grapefruits and I couldn't stand the sourness or the taste. But now I really like them and enjoy the crisp citrus flavour every morning. It seems to wake you up! They are also a good source of vitamin C, contain the fiber pectin and the pink and red grapefruits contain the beneficial antioxidant lycopene.

To explain that a little better (for those of you who didn't take Home Economics classes):

Vitamin C - is good for wound healing - from cuts, open wounds, broken bones and burns and preventing infection within the body.
Fiber - Pectin - many benefits such as normalising bowel movements, helps lower cholesterol, helps control blood sugar levels and aids in achieving a healthy weight.
Lycopene - helps to lower the risk of prostate cancer, higher levels of this vitamin have shown to give protection against heart attacks and have also shown to protect against breast cancer.

It's also super easy to prepare - slice in half (careful with the knife), cut the segments with a serrated blade (again, careful with the knife), then cut around the outer circumference of the grapefruit to free the segments. Then wrap in cling film, I then pop in my small box and pop in the fridge overnight until I go to work the next morning.

TIP: Oh remember and take a fork or like me you'll be using your fingers!!
